Homemade Sweet Potato Chips

Hello lovely viewers! I realized that I’m such a lazy bloger. Yes. I admitted. Oops! it is already June! I really gotta blog more about Korean veggie food. But every time when I cook, I forget taking photos because I only think about eating my food. :)

Okay. It is June. We’ve come half of 2010. OH! I’m scared!!! Have I done anything my 2010 new resolution? I’ve read only two books finished, I didn’t get enough score of GRE for graduate school, I’ve posted only 5 recipes. Um… but I have a good news! I’ve lost 8 pounds so I’m getting ready for summer bikini. :D How about that? My goal weight is 98 pounds. I think I can make it.

So you’re wondering how I could keep my diet, aren’t you? I eat tofu salad (want to see my tofu recipe?) for my dinner after exercise and try to eat more veggies and fruit. I also eat snacks between meals. This sweet potato chips is one of my common snack for me as a little treat. Especially Korean sweet potato is so sweet and soft. Its color is a little bit different from a yam. the skin is more red or purple. And the inside is very bright yellow color. More and more sweet potato has a lot of vitamin A and a very good source of vitamin C which are good for woman’s health as an antioxidant food.

So you should try Korean sweet potato for this. You would be addicted once you try it like I’m.
Hahaha! Look at this! It was so crispy and full of sweet flavor.

Ingredients:
one sweet potato, olive oil

Direction:


1. This is a Korean sweet potato. I bought it at H-mart. (I went to H-mart with my friends Carrie and Derek. I’m wondering how they cooked it.)

 


2. Please slice it as thin as you can. If you have a slicer that is easier to slice. Before I sliced it, I cut the sweet potato in half because it was pretty big. Its diameter was 3.5 inches.

 


3.Preheat the oven to 345°F. And place the sliced sweet potato on oven tray. I baked two times because I had only one tray.

 


4. Brush some olive oil on the surface of the sweet potato. Or spray olive oil.

 


5. Place in oven. Bake for 20 to 30 minutes. You should check after 20 minutes if it turns golden brown color. And watch it for not burning it.

 

Tada! This was actually a little bit effort to me. I’m not patient to wait for baking. But it is worth to spend my time. I was so enjoying my homemade sweet potato chips while I was watching ‘So you think you can dance.’
